Parsnips are a classic winter root, sweetened by frosts and perfect for roasts.

Growing Parsnips

When to Sow

  • Direct sow Feb–May outdoors or under cover for earlier germination.
  • Fresh seed is essential, as old seed loses viability quickly.

How to Grow

  • Sow thinly in rows 30cm apart.
  • Thin seedlings to 10cm spacing.
  • Keep soil moist for even germination.

Harvesting

  • Harvest Oct–Feb.
  • Roots improve in flavour after frost.

Polytunnel Growing Tips

  • Earlier sowings under cover improve germination.
  • Tunnel-grown parsnips mature sooner.

Quick Tips Recap

  • Sow: Feb–May
  • Spacing: 10cm
  • Harvest: Oct–Feb
